Its quite an interesting use of collateral and of course is sustainable only as market keeps believing that demand for cheese forms stays either steady or increases. Currently you have around 3 years to bring the form to the market, and refinance the flow, older than that you go to target premium cheese market sections that value really old and matured forms. Until it lasts you ride it, I am Italian and I have a bitter sweet feeling about that, I do recognize and appreciate the value and exclusivity of parmigiano in foreign markets and I also believe is going to last a lot over the years, so from the bank prospective it may not be a huge risky bet. However, can't avoid to notice that Italy makes it to international finance news only when it comes to food and other low tech products.

I'm not so sure 'low tech' is the backward label it used to be. The economic model that seems to be ascendant right now is moats and castles. Maybe AI can replace your doctor and lawyer, but can it replace your pecorino and prosciutto?

I don't believe that AI will be able to replace doctors or lawyers anytime soon, and I am positive that it can't replace pecorino. But pecorino is a nice addition to have, should not be the pillar of the economy. If US doctors and lawyers disappear the demand for expensive Italian cheese in the States would drop a little I am sure. Happy to exchange pecorino producers with Apple :)
